The only cauliflower pizza crust you’ll need. Are you trying to follow a keto or low carb lifestyle but miss pizza? Look no further! This is by far the easiest crust you will find.
It has three simple ingredients and holds together quiet well. Check out the optional extras to add to the crust to make it, well, not taste like real pizza, but give it more substance. I’m going to say it, low carb/ keto alternatives to pizza do not taste like pizza.
And that’s ok. Sometimes.
You can have this alternative more often and treat yourself every now and then to the real deal. Life is about balance.
Personally, I think a fathead crust (recipe to come) tastes a bit more like a traditional pizza crust, but this one definitely took away my pizza crazing when I was struggling!
How to Make Cauliflower Pizza Crust (the right way)
The simplest trick to cauliflower pizza crust is not grating the cauliflower too small. Too small and it becomes a weird moist dough. Too large are you’re just chewing a salad.
Grate the cauliflower to a shredded cheese consistency and steam it to cook it through. Once done and cooled, place it in a cheese cloth to get as much water out as possible. Combine the cheese and egg and bake. Done. Simple right?
Alternative Ways to get that Crust Tasty
Here are some additions you can toss in to make the cauliflower pizza crust better. It’s less simple, but more delicious. Still pretty easy too.
- Seasoning – add garlic power, onion powder, oregano, etc to the crust to really enhance the flavors.
- Cream Cheese – cream cheese makes anything taste good, change my mind. Adding a table spoon to the crust doesn’t help with the crunch, but improves the flavor. Soften it in the microwave for a bit to make sure it is easy to incorporate
- Goat Cheese – use goat cheese for a dry, crunchy pizza crust. If you don’t have it and don’t have a goat, you can use mozzarella instead of parmesan. You can melt the cheese a tiny bit to help mix everything in.
- Xanthan Gum – this will help bind everything together well.
- Psyllium Husk – this is also a binding agent, that adds a bit of fibrous texture to the crust making it more filling.
Simple Tips for the Ultimate Crust
Remember to get as much of the water out of the cauliflower as possible to avoid a soggy crust.
In total contradiction, use freshly grated cheese to increase moisture and flavor. Add seasonings and flavors to the crust, not just on top of the pizza.
Make sure the mixture is not too hot before adding in the egg, we don’t want to make scrabbled eggs. Close your eyes and pretend it’s dominos.

Again, while this isn’t pizza, it is a healthier alternative. We shouldn’t completely cut foods out of our lives, I am a big fan of moderation, of the 80/20 rule, of treating yourself. It is healthier though, and can take away cravings while you try out a keto or low carb diet for a bit.
The Easiest Cauliflower Pizza Crust
Ingredients
- 2 cups Riced Cauliflower
- 1 cup Parmesan Cheese shredded
- 1 Egg beaten
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Grate cauliflower into rice texture, steam on stove or in the microwave for about 15 minutes. Remove and wait till cool.
- Place cauliflower in cheese cloth or thin towel and squeeze out water.
- Mix in cheese and egg in a large bowl and add the cauliflower.
- Flatten into a crust, making sure edges are thicker and bake for about 20 minutes.
- Add sauce, pizza toppings and broil for 5 to 10 minutes.
- Enjoy!
